It's Day 14 of the Vegan Kick Start and here's what I had:
Breakfast:
- Mini Mixed Berry Muffin
- Cherry Smoothie
Lunch:
- Veggie Taco with Chips and Salsa from Baja Sol
Dinner:
For the red sauce I sauted onions and garlic in a little Earth's Balance for about five minutes then added sliced carrots to the pan and cooked for another five minutes or so. Next I added a couple of handfuls of spinach and cooked until wilted. Finally, I added a can of Canellini beans and a can of tomato sauce along with salt, pepper, and basil for seasoning. I simmered the sauce for 5-7 minuntes and served over fettuchinne noodles. Less than 30 minutes from start to finish and quite good, if I do say so myself!
